Our dining room sits along the front of the hotel, with tall windows looking out over the promenade. The kitchen runs a short, seasonal menu built around produce from the South Downs and the day's catch from the Sussex coast — simple, well-made plates rather than anything overworked.
Dinner service runs every evening, with a set tasting menu available on weekends for guests who want to make a full night of it before heading down to the casino floor.
The Velvet Bar sits just off the casino floor — a low-lit room of leather booths and a long backlit shelf of spirits, built for the hour after dinner. The cocktail list leans classic, with a short rotating menu from our head bartender each season.
It's a popular spot to end an evening, whether that's after a win at the tables or simply after a good dinner and a walk along the seafront.
Start with a table in the dining room, looking out over the promenade as the light fades.
Move down to the casino floor for an hour or two at roulette or blackjack.
Finish the night at the Velvet Bar with a last drink before heading up to your room.
